Ballpark Cuisine: Guilt-Free Tacos

As a lover of baseball, it’s hard not to be intrigued and inspired by the flamboyant nature of Latino culture. So many great Latino players, or those with Latino roots, grace the locker rooms and fields of Major League teams daily, bringing with them their beaming smiles, colorful dance moves, and sizzling cuisines.

In total, approximately 30% of players in the Major Leagues are Latino, with most hailing from the Dominican Republic, Venezuela, and Cuba, alongside others from Puerto Rico, Mexico, Colombia, Curaçao, Panama, Brazil, Nicaragua, and Aruba. The number of Latinos currently playing in the Major Leagues far outweighs that of African-Americans, which consist of less than 10% of all players listed on active rosters. As a result, and as one would expect, Latino tunes and dishes feature prominently inside most MLB stadiums.

For me, of all Latino dishes, nothing beats the humble taco; the traditional Mexican dish comprising of a corn or wheat tortilla folded or rolled around a filling. While everyone has their own unique way of preparing a taco, most people focus on the meat, spice, sauce, and cheese, and often forego the all-important fresh ingredients.

It’s widely accepted that eating the recommended daily intake of five vegetables is, at times, hard to achieve. However when preparing tacos, this can be achieved very easily. Adding a wide variety of fresh vegetables will significantly improve the taste and texture of you taco, ensuring your Latino culinary experience is of the highest quality.

Guilt-Free Mexican Tacos (six medium sized tacos)

What you’ll need…

  • Six medium sized tortillas
  • 500g mince beef (lean)
  • 250g traditional salsa sauce (fat free)
  • 40g Mexican seasoning
  • ½ cup shredded mozzarella cheese (low fat)
  • Extra virgin olive oil
  • Three carrots
  • One red onion
  • One avocado
  • 150g green beans
  • 150g corn kernels
  • 100g celery
  • 100g mixed green leafs (i.e. lettuce, spinach, etc.)

What to do…

  1. Place mince beef into a large saucepan, thinly lined with extra virgin olive oil. Cook for approximately three minutes on medium heat, stirring occasionally.
  2. Add Mexican seasoning and traditional salsa sauce. Cook for approximately five minutes on medium heat, stirring occasionally.
  3. Dice carrots, red onion, avocado, green beans, and celery into small pieces, then add into saucepan. Also add corn kernels at this time. Cook for approximately seven minutes on high heat, stirring frequently.
  4. Place open tortillas on serving plate, and add mixed green leafs and shredded mozzarella cheese. Remove meat and vegetable mix from heat and place two medium sized scoops of mix into open tortillas.
  5. Fold tortillas into shape and enjoy!
